Holiday Cooking Feature: Simply Potatoes Review & Giveaway- Ends 11/18

I know that I can't be the only who loves mashed potatoes, but cannot stand the process of making them. The peeling. And dicing. And boiling. And mashing. It can be exhausting! Add in 2 toddlers- well, mashed potatoes have become a rare treat! =) I recently had the opportunity to review Simply Potatoes, and since I tore cartilidge in my knee on Friday, these potato products that are meant to simplify cooking were perfect for some holiday food experimenting this weekend! Every holiday I am always scrambling last minute to finish cooking, how great would it be to not have to worry about all of the preparation that goes into potato dishes? I decided to pick up the Garlic Mashed Potatoes and Hash Browns to use in two separate recipes.

The first recipe I chose was Carmelized Onions & Horseradish Mashed Potatoes. These are perhaps the most delicious mashed potatoes that I've ever had- and they only took a few minutes to prepare! Cutting the onions was the most involved part of the process. These are definitely going on the menu for Christmas!

 
 
I was going to try a breakfast dish with the hash browns, but I found a great looking recipe for Chicken Salsa Verde Casserole while browsing the fantastic recipe feature on the Simply Potatoes website. This was another super east (and delicious!) recipe! The recipe was really good just the way it was, but I also thought about a ton of ways that I could change it up!
