Fast Beef Stir Fry

Lately our days have been one big blur between school, work, and after school activities. I haven't had time for intricate recipes, yet we don't really want to eat frozen pizza every night. So I've been experimenting with quick, easy meals. Tonight I made beef stir fry...and it took all of 15 minutes! Instead of spending time chopping fresh veggies, I simply used a bag of frozen florentine style veggies. I used some steak that I had in the freezer, delmonico cut, but you can really use whatever cut you have on hand. Just slice up the steak, toss in the veggies, splash with soy sauce, and sprinkle some salt and pepper on. And DONE! Healthy dinner in just a few minutes! We served ours with basic white rice.
